INGREDIENTS

  • 2 Tbsp Dijon Mustard
  • ProQ Beefy BBQ Rub
  • 1kg Beef Roasting Joint

METHOD

STEP 1

Light your ProQ Smoker, take the beef roasting joint and lightly rub it all over with English Mustard, then season all sides with a mix of finely ground black pepper and salt, or our ProQ Beefy BBQ Rub.

STEP 2

Place directly on the smoker grill once the temperature is at 225°F (100°C). Add your ProQ Smoking Wood Chunks with the water pan in place. Check the smoker every hour or so and top up your fire and water if needed.

STEP 3

Remove the joint when it reaches your desired internal temperature: Rare 125°F (51°C), Medium Rare 135°F (57°C)Medium 145°(62°C), and Well Done 155°F (68°C). Allow to rest for around 30 minutes.

STEP 4

Serve and enjoy.
