This is a recipe for classic Roast Beef cooked on a ProQ Smoker. It's simple and delicious.

INGREDIENTS
- 2 Tbsp Dijon Mustard
- ProQ Beefy BBQ Rub
- 1kg Beef Roasting Joint

METHOD
Step 1
First of all, Light your ProQ Smoker, take your beef roasting joint and cover it in Dijon Mustard making sure all areas of the joint have even coverage then do the same again with some finely ground black pepper or our ProQ Beefy BBQ Rub.
Step 2
Repeat step one using some finely ground black pepper or, preferably, our ProQ Beefy BBQ Rub.
Step 3
Put the joint on the smoker at 225°F (100°C), and add your ProQ Smoking Wood Chunks. with the water pan in place and its set. Check the smoker every hour or so and top up your fire and water if needed.
Step 4
Remove the joint when it reaches your desired temperature (Rare 125°F, Medium 145°F and Well 165°F) and allow to rest.
